French Bread

5 or so cups of flour (as needed)                           1 TB sugar

3 tsp. salt                                                                         2 pkg. yeast

2 c. water                                                                         2 TB shortening

To finish the crust: 1 TB water and 1 egg white

Dissolve yeast in warm water. Mix all other ingredients. Add the yeast water to flour mixture. Need the dough. Place in a greased bowl and cover until doubled in size. Punch down. Separate into halves. Make 3 pieces out of each half. Roll out each piece into a rope about 12-18 in. Place the ropes on a greased cookie sheet and braid from the center out.  Turn and work the other end. Tuck under the ends when finished. Repeat for second loaf. Brush the dough with water and egg white. Let it rise again. Then cook at 375 for 25-30m.
