Toasty Nut Granola

This is a family recipe. I have altered it so that I can make more at once. I stopped buying cereal a few years back when our family ate the whole box in one breakfast. Homemade granola is a more affordable alternative. I love to mix it with oatmeal or sprinkle on top of yogurt.

Ingredients:

12 c. rolled oats                    1/2 c. sesame seeds

1 c. brown sugar                   2 c. chopped nuts

1/2 c. wheat germ                1 c. veg. oil

1 c. wheat germ                     2/3 c. honey

raisins                                     3 tsp. vanilla

Use 2 ungreased casserole dishes around 9 x 13 or around that dimension. Put 6 c. rolled oats  in each dish and toast in the oven at 350 degrees. In a large bowl mix oats and all ingredients except oil, honey, vanilla and raisins. Heat oil, honey, and vanilla in sauce pan until the honey is melted. Pour over oatmeal mixture and stir in. Pour granola into pans and toast in the oven stirring every 10 minutes until golden. Stir every so often when cooling. Add raisins or dried fruit. Store in the refrigerator if you will not eat it up in a week or two.
